Roger Tofte, the owner and creater of Enchanted Forest, built nearly everything you see in that park. He is respinsible for all of the theming in Challenge of Mondor. All of the recordings you here through-out the park, and on the rides are done by him and his family. His kids have been heavily envolved in the opperation of the park for a long time now and I'm confident it will stay in the family for a long time so I don't see them changing from the overall "Disney" type feel of the park.
Unfortunately, all of this is good and bad. Bad, if you want see new rides every few years. Good, if you wnat to know the park will keep the same feel it has had sense day one. It was over ten years between Big Timber and Challenge of Mondor. They do not have the budget of a park even Silverwoods size so the rides come slowly.
As far as what I would like to see in the park, I have always thought a wooden terrain coaster like Boulder Dash would be a great addition to that park. It would fit well with the western theme that a lot of the park has. A suspended family coaster like you said would also be pretty cool. Also a mine train coaster would fit and could be added at not too much cost compaired to other coasters. Kind of a Thunder Mountian type of theme.
I believe what is planned next is an expansion of English Village. They still plan on keeping much of the park walk through type attractions like storybook lane and Tofteville. Whatever it is though, I'm sure it will be a few years in the making.

Nice TR skinnyguy...sounds like you had fun.
Parks like this are a dying breed. EF is a true gem.
When you think about it, even though we are pretty theme-park starved up here in the NW, we've got a couple of nice parks that remain sheltered from the mega-corporation takeovers.
For now.
